Recipes

Anyone who knows me knows that I love to cook. I find cooking to be a wonderful stress reliever. It also has the added bonus of something good to eat at the end.

In this column, I plan to post a new recipe every week that is simple enough it can be made on campus with just a few ingredients, with the possibility of a more complicated recipe from time to time. All of these are recipes that I have either created myself or have been taught to me by the women of my family who taught me to cook. I will attempt to include dietary and nutrition information where I can and offer suggestions of minor modifications where I have tested them. I am dairy-free myself, so there will be at least a dairy and non-dairy version of every recipe where dairy would be used.

If you have any questions regarding any of the recipes, please let me know and I will do my best to answer any questions you have. If there is a particular food you want a recipe for, please suggest it and I will see what I can do. I love experimenting with new recipes, so suggestions are more than welcome. If you decide to make any of these recipes, I wish you the best of luck.

Peanut Butter Cookies

As Lent begins next week, this will be my last dessert recipe for a while. My plan for Lent is to only publish recipes which are completely meatless, mainly different meal options but possibly a few bread recipes. But until Lent begins, I hope that you enjoy these cookies. Chocolate chip cookies are probably the most famous, but peanut butter cookies are one of my favorites. Using oats adds a nice flavor to the cookies without overwhelming them. Ingredients: 1/2 cup butter or margarine, softened 1/2 cup granulated sugar 1/2 cup honey 1 cup peanut butter 1 egg 1 teaspoon salt 1 teaspoon baking powder 1 1/4 cups all-purpose flour 1/2 cup oats Instructions: Cream the butter and sugar. Stir in the honey and peanut butter. Mix in the egg. Add the salt and baking powder. Fold in the flour and oats. Chill the cookie dough for at least two hours. Orange Chocolate Cookies

Recently a friend told me that she was craving oranges and chocolate. Another friend responded that she had a bag of oranges that needed to be used. So, to feed two birds with one cookie, I came up with a simple and delicious recipe for Orange Chocolate Cookies! This seemingly uncommon mix is an easy to bake delicious treat that is sure to liven up your day and make you crave more! Even better, the ingredients are common and cheap! Orange Chocolate Cookies Ingredients: 1 stick of butter/margarine 2 cups of white granulated sugar 2 eggs 1 teaspoon of vanilla extract 1 teaspoon of baking powder 1/4 teaspoon of salt 2 1/2 cups flour 2 medium or 1 large orange 4 ounces chocolate chips or baking chocolate (roughly chopped) Instructions: Preheat the oven to 325℉.
